Growing up on a tiny farm in Ukraine, I spent my childhood eating plenty of bublikis (bagels) without a care in the world. They were made with traditional ingredients – aka they were carb bombs with empty calories, and they left me feeling not so great.
Fast forward 20 years later: I’m working as a professional vegan chef and living in the bagel capital of the world — NYC. In 2020, I looked to create the perfect grain-free bagel so when I started testing our current bagel recipe, I couldn’t believe that a few simple ingredients made the perfect, crispy-on-the-outside and soft-on-the-inside bagel. They were everything I had hoped for — high protein, high-fiber and way less carbs. My goal was simple. Every Masha’s recipe was going to be the kind that you can make at home. No chemistry experiments, just your beloved bakery classics, reimagined.
